Fancy French Name

A dry French farmhouse ale that is brought into the world like most other saisons… but, unlike it’s friends, it is transfered into French oak Chardonnay barrels once fermentation is complete and dosed with Brettanomyces (those of you who have been paying attention will remember that Brettanomyces, or “Brett” as it is colloquially known, is a wild yeast that imparts a tart, “funky” flavor and aroma to the beer). Over an indeterminate number of months, the Brett works it’s magic and the beer that is taken out of the barrels has a blend of spicy Saison yeast character, fruity and funky Brett character as well as some tannins from the time in contact with the wood.
